Oi. Behind already. Well, better late than never, right?
Let me start off by saying we are LOVING this. It is so fun to have a connection to the food you're growing. To talk to the farmer about how crops are doing and to eat food that is so local. It really truly feels good. It also forces us to get creative and learn new things, try new things. Like tomatillos (yum!). There's also a bit of big news in regards to food around here... Hubby has decided to vegan! Well, almost vegan (we still eat honey on occasion). This has me thinking we'll need a larger share next year... anyway, here goes!
Week 2:
I'm going to do my best to remember what was in there...
2 lbs potatoes
1 bunch of carrots
2 tomatillos
1 heirloom tomato
1 pint cherry tomatoes
1 bunch of rainbow chard
1 head of cabbage
1 bunch of japanese bunching onions
2 zucchini
1 cucumber
1 garlic bulb
1 bunch spinach
1 bunch dill
Hmm... I think I got it all... Here's what we did with it:
2 lbs potatoes - a few used for purple dinner, a few used for soup
1 bunch of carrots - some for roast dinner, some eaten raw
2 tomatillos - added to salsa
1 heirloom tomato - added to salsa
1 pint cherry tomatoes - quinoa tabbouleh (delish!)
1 bunch of rainbow chard - some chopped and sauteed for tabbouleh, some dehydrated and ground into powder
1 head of cabbage - added to quinoa cashew salad
1 bunch of japanese bunching onions- used in tabbouleh and soup
2 zucchini - some added to stir fry, some dehydrated into chips
1 cucumber - sliced and eaten raw
1 garlic bulb - used in cooking throughout the week
1 bunch spinach - dehydrated and ground into powder
1 bunch dill - used to can pickles

Week 3:

1 HUGE head of lettuce
1 bunch of rainbow chard
1 pint cherry tomatoes
1 bunch of ginormous radishes
1 garlic bulb
1 red slicing tomato
2 tomatillos
1 bunch japanese bunching onions
1 pint of blackberries
1 head of fennel
1 bunch of parsley
1 cucumber
Again, I think I got everything (I really need to start writing it down when I get home!)
Here's what we did/are doing with it:
2 lbs potatoes - mashed potatoes
1 bunch of carrots - eat raw for snacks
1 HUGE head of lettuce - ginormous salad (yum)
1 bunch of rainbow chard - stir fry
1 pint cherry tomatoes - more tabbouleh (oh yes... I'm obsessed)
1 bunch of ginormous radishes - radish and green bean salad
1 garlic bulb - used in cooking throughout the week
1 red slicing tomato - added to salsa
2 tomatillos - added to salsa
1 bunch japanese bunching onions - added to salsa
1 pint of blackberries - snacking
1 head of fennel - ?maybe in soup?
1 bunch of parsley - tabbouleh!
1 cucumber - snacking
