Home made Lara Bars!


Okay, so I'm not the worst photographer ever... except maybe when it comes to food. Bear with me. 

These were SO easy, and they passed the taste test with the bug (most critical!!). Bug loves to snack on Lara bars, and I love that they're made of simple healthy ingredients. What I don't love is the packaging (okay the price is a bit high for everyday eating too). Luckily this is one of those things that you can find about a million recipes for online. I used the cashew cookie recipe on The Inner Gourmet since bug loves the cashew lara bar and cashews are a staple around here. The recipe instructions are very good, the only thing I'd add is that for me 8oz of dates was approx 16 dates(in case you don't have a kitchen scale). I also didn't follow the directions for packaging since I wanted to avoid packaging altogether. I just refrigerated the 'dough' and then broke it into four even chunks and formed it into bars by hand and stuck them in a pyrex dish in the fridge. Super easy, healthy, low waste, (both ingredients are bought in bulk), and even a little thrifty. Nice.
